Vincenzo and Giorgio reignite affordable dining and community spirit at Coral Bar and Bistro

Coral Bar & Bistro is back,  offering locals and young travellers a welcoming spot to enjoy affordable meals. Restaurateur Vincenzo di Cugno, known for La Cucina + Bar and the Beach Shack, has once again partnered with Giorgio Simonetti to bring back this beloved community hub.

Located within Coral Beach Lodge, the bistro underwent significant renovations by its owners before briefly reopening in May 2023. It later closed as they searched for a passionate operator to lead the space. 

That opportunity has now been embraced by Mr di Cugno and Mr Simonetti, who aim to create a vibrant and affordable dining experience for all.

“We noticed the venue was for lease and saw its potential,” Mr di Cugno said. 

“The location is great, and with ongoing developments at Coral Beach Lodge, like new accommodation being added, we saw an opportunity to create something special.”

The duo, who have worked together for over seven years, including managing the Beach Shack since its opening last year, are bringing their shared vision to life at Coral Bar & Bistro. 

The menu offers a mix of Italian, Argentinian, and Australian influences at accessible prices.

“Our head chef, Juan, is Argentinian with an Italian background, and he brings a unique twist to classic dishes,” Mr Simonetti explained.

 “For example, we’re serving a chicken parmigiana in an Argentinian style, which has already been a big hit.”

The bistro caters to different crowds throughout the evening.

“During the earlier hours, locals can enjoy a good meal at an affordable price, our mains are under $30, which is rare in town,” Mr di Cugno said. 

“The kitchen will be open until about 8.30pm or 9pm, and after that, we’ll offer a snack menu with options like sandwiches and a few easy-to-prepare dishes.”

After 9pm, the venue transforms into a lively social spot for young people, complete with drinks and regular live DJ performances.

The future looks bright for Coral Bar & Bistro, with the landlord continuing to invest in upgrades, including a planned glass fence around the pool and new poolside dining areas. 

These additions will pave the way for events like pool parties.

“We’re excited about the opportunities these upgrades will bring,” Mr Simonetti said. 

“We want Coral Bar & Bistro to be a hub for everyone, somewhere locals can enjoy great food and drinks at reasonable prices, and younger travellers can socialise and have fun without breaking the bank.”
