San-ti Restaurant and Bar at Niramaya Port Douglas is spotlighting its commitment to the local community with the launch of their new ‘local’s card’, offering substantial discounts to area residents.

Since its transformation earlier this year from a hidden gem within a resort to a highly sought-after standalone dining destination, the restaurant has increasingly focused on serving the local community. 

The introduction of the local’s card is central to this shift, offering substantial discounts without the need for registration or personal details.

With the card, locals can enjoy breakfast for just $15, while lunch and beverages are discounted by 20 percent, making a beer just $7.50. For dinner, the card offers a 10 percent discount, ensuring a high-quality dining experience without the hefty price tag.

The card is easily accessible to locals without having to fill out forms or personal details. Hard copies are available at the restaurant’s desk, and as a digital version. It includes QR codes for easy reservations and sharing.

Food & Beverage Operations Manager at San-ti, Keith Lefevre, explained the philosophy behind the initiative.

“It’s often challenging for venues to cater to locals during peak seasons, but we’re dedicated to maintaining our specials year-round and supporting the community that supports us,” he explained. “Our goal is to provide consistent offerings without straining your budget.”

San-ti’s approach is to offer an affordable environment that encourages frequent visits. 

Mr Lefevre noted that Port Douglas locals are proud of their dining options but may shy away due to high prices. By offering budget-friendly options and maintaining a welcoming atmosphere, San-ti aims to change that perception. 

“Instead of bringing relatives or loved ones just once a year, we want locals to feel comfortable coming more often,” he added

The restaurant’s commitment to locals is evident in its consistent service and pricing strategy. The local’s card includes benefits valid until the 30th of September, with plans to introduce new offers quarterly. 

Additionally, San-ti has eliminated its 20 percent public holiday surcharge, a move appreciated by customers who have responded positively to the change.

Taste and talent

In terms of its menu, San-ti has set itself apart by shifting from the typical fusion trend to a focus on Indonesian-inspired dishes, enhancing the restaurant's distinctive ambiance.

At the core of San-ti’s culinary excellence is Sous Chef Josh, who has been collaborating with Mr Lefevre for nearly nine years across various locations, including Fraser, Daydream, and Fitzroy Island.

“Josh is a true expert in Asian cuisine,” Mr Lefevre said. “In my experience with thousands of chefs, only a few possess that unique touch, the innate ability to create extraordinary flavours and concepts that others struggle to achieve.”

He added, “Josh’s talent is like that of a top-tier athlete with a natural gift, refined over time. I’m the ideas guy who develops the concepts, and Josh brings them to life.”

As the dining landscape has shifted from high-end, pretentious experiences to more accessible and enjoyable bistro styles, San-ti has adapted its offerings and pricing to match these evolving tastes and financial realities.
