Niramaya’s culinary evolution brings Bali to Port Douglas

Escape the need to board a flight and immerse yourself in the tranquillity of Bali right at Niramaya Villas and Spa Port Douglas. The restaurant and bar, now rebranded as ‘San-ti’, has undergone a significant transformation, shedding its image as a ‘hidden’ resort and aiming to establish itself as a standalone restaurant.

The recent transition to San-ti - which signifies tranquillity and peace - not only represents a shift away from perceived exclusivity and high-end status but also marks a journey towards appealing to a broader audience.

Both the breakfast and lunch menus have been revitalised, offering a diverse array to cater to various culinary preferences, incorporating a more casual, family-friendly approach. A noteworthy addition to these changes is the introduction of a $15 breakfast special.

Keith Lefevre, Food & Beverage Operations Manager at San-ti, accredits his long-term right-hand Chef de Cuisine, Joshua Young, for spearheading the new direction; emphasising a fusion-style offering in the dinner menu with unique Indonesian flavours. This, he believes, allows San-ti to offer something unique to our community.  

With two decades of experience in high-end five-star establishments in Canada and diverse roles across Australia, Mr Lefevre brings a wealth of expertise to Port Douglas. Having assumed the position at Niramaya just six months ago, he has ambitious plans for San-ti’s future.

Among these plans is the introduction of a delivery service, addressing a current gap in the market where no dedicated food delivery company exists.

San-ti is open from 7.30am to 10.00am daily for breakfast, 12.00pm to 3.00pm daily for lunch, and 5.30pm to 8.00pm from Tuesday to Saturday for dinner. For the full menu and online ordering click here

“Our goal is to bring late-night comfort food options available in bigger cities right to your doorstep,” he explained. “While the offerings are simple and separate from what we offer inhouse, the convenience of having meals delivered to your home makes it stand out. 

“We stand well-prepared with essential equipment and infrastructure, boasting three to four dedicated delivery cars and a proficient, fully staffed team.”

In addition to these developments, the restaurant has broadened its takeaway offerings, introducing barbecue hampers.

“Observing guests from a nearby resort barbecuing, I wondered where they sourced their food,” Mr Lefevre explained. “Turns out, they were going to Coles or Woolworths.

“We've assembled comprehensive packages, offering a convenient one-stop solution delivered to your door. These packages include everything you require for a barbecue, covering both hot and cold items. From essential seasonings to olive oil, we’ve got you covered.”

San-ti’s back bar has also undergone a transformation, exclusively showcasing Australian spirits locally sourced from Queensland. 

“Our selection is unique and distinctive, steering clear of generic domestic brands,” Mr Lefevre said. “The bar has an evening influence with an Asian flair, and it features an array of spirits originating from the tablelands and beyond. This creates a uniquely Queensland experience, especially appealing to international tourists and guests staying with us.”

For those wishing to combine a restaurant visit with a day at the Southeast Asian-designed poolside area, the restaurant extends a warm welcome to day visitors.
