Brand new team heads Hemingway’s Port Douglas

Hemingway's Port Douglas has undergone a complete transformation with a new Head Chef, a fresh menu and a revamped kitchen.
The kitchen team is all smiles in their new workspace after a week of refurbishment, including a new floor, a fresh coat of paint, and updated equipment.
The restaurant's new Head Chef, Karel Polo, hails from Peru and brings with him a wealth of experience in Peruvian cuisine as well as a modern approach to French, Italian, Spanish, Australian, and more.
Hemingway’s Marketing Manager, Kim Logan, said that Mr Polo also has experience in well recognized Australian restaurants and comes most recently from the Hilton in Cairns.
Exciting flavours
The new menu, launched on March 31, retains the classic Hemingway's style while introducing exciting new flavours.
“Guests can indulge in snacks and shares such as Birria quesadillas and prosciutto croquettes, as well as fresh salads like the quinoa bowl with the option of adding chicken or artichoke and a salmon and Cajun corn salad,” Ms Logan said.
“Traditional favourites like burgers, fish and chips, and pizzas are still on the menu, but with intriguing new twists like the Greek lamb pizza and carbonara pizza, which showcases Chef Karel's his varied experience in world cuisines
Head Chef Karel Polo's go-to dishes are the smoky brisket taco and the chicken wings with Hemingway's hot sauce, which pair perfectly with a chilled Pitchfork Betty's.
Crafting the Hemingway’s experience
Hemingway's Port Douglas is not only bringing a new Head Chef and menu, but also a management team and Venue Manager who are dedicated to representing the Hemingway's Brewery brand.
Ali O’Neill, the new Venue Manager, who comes with three years of experience working at Hemingway’s in Cairns, is a true beer enthusiast who takes pride in his career and his involvement with the local community.
Aiden, Michael, and Sharelle make up the rest of the management team, and their growth within the Hemingway's family speaks volumes about the opportunities for advancement and career development within the company.
Engaging with the community
The Hemingway's team is committed to engaging with the local community, with Venue Manager Ali O’Neill leading the charge.
With plans for special events in the works, guests can look forward to trivia nights, the Carnivale weekend, and the FNQ Gin fest and Seafood extravaganza.
